Seafood Chowder

I tried several recipes before settling on this one.
Ingredients
- 1 Tbsp olive oil
- 1 teaspoon butter
- 2 slices bacon
- 1 can tomato sauce (6oz)
- 1 medium yellow onion, chopped (about 1 cups)
- 1 clove garlic
- 1 stalk celery
- 1/4 cup dry white wine, or Sherry, or Beer
- 2 large potatoes (about 3/4 pounds), peeled, cut into ¾-inch cubes
- 1 cups clam juice
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 1/4 teaspoon sage
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon Old Bay
- 3/4 lbs cod, fillets cut into 2-inch pieces
- 4 oz can lump crab meat
- 4 oz can small shrimp
- 4 oz can clam pieces
- 1 cup heavy cream
- 1/4 cup flour or corn starch
Preparation
- Peel and dice potatoes
- Peel and dice onion and garlic
- Dice celery
- Dice bacon
Instructions
- Fry bacon over medium heat in large pot. Remove bacon when crisp and set aside, leaving fat.
- Add onion, garlic, and celery to pot and sauté until onion is translucent
- add diced potatoes and saute for a few minutes
- Add wine and reduce a small amount
- Add clam juice and water from any other canned seafood
- Add diced tomatoes and juice from can
- Add tomato paste
- Add all dry seasonings and bacon
- Boil for about 10 minutes on medium-high heat (until potatoes are soft)
- Add fish, seafood, and cream. Bring to slow simmer.
- Cook for 10 minutes, stirring as little as possible.
- Thicken with water in flour/corn starch in the last 5 minutes
